Ingredients

Red Velvet Cupcakes

2 1/2 cups flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter (room temperature)
2 cups sugar
4 eggs
1 cup sour cream
1/2 cup milk
2 tablespoons red food color
2 teaspoons pure vanilla extract

Vanilla Cream Cheese Frosting

1 cup cream cheese (room temperature)
1/4 cup butter (room temperature)
2 tablespoons sour cream
2 teaspoons pure vanilla extract
2 cups sugar
Mini marshmallows
Strawberries

Step 1: Preheat oven to 350 degrees and mix the dry ingredients together.

Mix together the flour, cocoa powder, baking soda and salt in a medium sized bowl, and set aside.

Step 2: For the cupcakes, beat together the butter and sugar in a large bowl with an electric mixer until light and fluffy.

Step 3: Beat in the eggs, one at a time.

Step 4: Mix in the sour cream, milk, food color, and vanilla extract.

Step 5: Gradually beat in the flour mixture on a low speed until just blended.

Step 6: Pour the delicious batter into mini cupcake/muffin cases!

Step 7: Pop into the oven for 15-20 minutes.

Pro tip: If you aren't sure your cakes are cooked, poke the center of one with a toothpick. If the toothpick comes out dry your cakes are ready!

Step 8: For the frosting, beat the cream cheese, butter, sour cream, and vanilla extract in a large bowl until light and fluffy.

Gradually beat in the sugar and add the food coloring.

Step 9: Using a piping bag, carefully add the frosting to your mini treats.

Step 10: Place a strawberry in the center of the cupcake and pipe around it.
