You Will Fall In Love With These Thanksgiving Spiced Pumpkin Cupcake Bites!

They're the perfect festive treat and SO easy to make!


Ingredients

Cupcake Bites

  • 1⅓ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¾ cup canned pumpkin
  • ½ cup granulated sugar
  • ½ cup dark brown sugar
  • ½ cup vegetable oil
  • Pinch of ground nutmeg
  • Pinch of ground cloves
  • 2 medium eggs

Cinnamon Cream Cheese Frosting

  • 1 cup cream cheese (room temperature)
  • 1/4 cup unsalted butter (room temperature)
  • 2-3 cups powdered sugar
  • 1 1/2 teaspoons cinnamon (add more to taste)
  • 1 teaspoon vanilla extract

Step One: Preheat oven to 350 degrees and mix the dry ingredients together.

Mix together the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves, and set aside.

Step Two: Whisk pumpkin puree, sugars and vegetable oil until combined.

Step Three: Add the eggs one at a time and mix until no lumps remain.

Step Four: Slowly add your flour and spices mix.

Step Five: Pour the delicious batter into mini cupcake/muffin cases!

Step Six: Pop into the oven for 15-20 minutes (or until they turn a light golden brown color)!

Pro tip: If you aren't sure your cakes are cooked, poke the centre of one with a toothpick. If the toothpick comes out dry your cakes are ready!

Step Seven: For the frosting, mix cream cheese, butter and powdered sugar until you have a nice, creamy consistency.

Add more powder to get your desired consistency!

Step Eight: Add cinnamon and vanilla extract and whisk some more!

Step Nine: Using a piping bag, carefully add the frosting to your mini treats!
